PERUVIAN HAM
So…one of Kate’s students from her artisan butchery & charcuterie programme with the wonderful Chapolard family, Renzo Garibaldi, from Peru, rang and asked if we’d like him to come over and cook us a Peruvian Ham (Jamon del Pais). Er, YES PLEASE RENZO! was the general response!
We’re in the middle of a pie baking and photography workshop with my old chum Kate Hill, and my brand new chum Kate McDermott. Many mouths to feed and Peruvian food not being something we’re familiar with we jumped at the chance.
Renzo turned up with a beautiful pigs rear quarter over his shoulder, and a metal case full of his knives in his hand (locked, he told me…’I don’t let anyone else touch my knives’)
